What You’ll Need

  • 1 boneless, skinless chicken breast
  • 1 can of whole potatoes
  • 1/4 cup mini carrots or chopped whole carrots
  • 1/4 cup grape tomatoes or halved cherry tomatoes
  • 1 ear of corn on the cob
  • 1 can sliced mushrooms
  • 1 small onion
  • 1/2 bell pepper, green, red, yellow, orange, or a combination
  • Garlic powder to taste
  • 1 garlic clove
  • 1 teaspoon Parmesan cheese
  • Salt and pepper to taste
  • 1 1/2 tablespoons butter, divided
  • Aluminum foil
  • Baking sheet
  • Sharp knife
  • Fork

What to Do

  • Preheat oven to 350 degrees
  • Lay out two layers of aluminum foil for each packet you want to create
  • Cut the garlic clove in half and squeeze lightly to start releasing the juices
  • Rub the juices onto the center of the top piece of aluminum foil
  • Use a fork to coat the foil with 1/2 tablespoon of butter on top of the garlic juice
  • Place the boneless, skinless chicken breast on top of the buttered foil
  • Drain the canned potatoes and arrange two to three potatoes around the chicken breast
  • Use the sharp knife to slice the onion and arrange the slices around the chicken
  • Cut the ear of corn in half and place with the chicken
  • Slice the bell pepper half and add to the packet
