What You’ll Need
- 1 1/2 sticks unsalted butter, softened
- 1 1/2 cups fine sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 large egg whites
- 3/4 cup milk
- 2 teaspoons pure vanilla extract
- Red and blue gel food colors
- Large mixing bowl
- 2 medium mixing bowls
- Electric mixer or wooden spoon
- 2 medium mixing bowls
- 3 small ladles or melon ballers
- Toothpicks
- Paper cupcake pan liners
- Cupcake pans
- Your favorite frosting recipe
- Patriotic sprinkles
What to Do
• Set the oven rack into the middle position
• Preheat the oven to 350 degrees
• Cream butter and sugar together in the large mixing bowl until they are light, fluffy, and a consistent color
• In the medium mixing bowl, combine the baking powder, flour, and salt, and set aside
• Beat the egg whites, pure vanilla extract, and milk together in another mixing bowl. Make sure you are using only whites as yolks will make the cake yellow
• Add 1/3 of the flour mixture to the butter and sugar and mix thoroughly
• Add 1/3 of the milk mixture and mix thoroughly
• Continue alternating flour and milk into the butter until the batter forms, scraping the sides of the bowl as you go to ensure all ingredients mix in completely
• Divide the batter equally into three bowls
• Dip a toothpick into the red gel food color and swirl it into one of the bowls of batter until you achieve the desired red color
• Repeat the process with the blue gel food color to create blue batter
• You should now have red, white, and blue batters
• Use one melon baller to distribute a scoop of blue batter into each of the paper-lined cupcake tins
• Use another melon baller to add a layer of white batter on top of the blue layers
• Use another melon baller to add a final layer of red batter on top of the white layers
• Bake the cupcakes approximately 25 minutes or until a toothpick inserted in the middle comes out clean
• Allow the cupcakes to cool in their pans for 10 minutes and then transfer them to wire cooling racks to cool completely
• Top with your favorite frosting and patriotic sprinkles or other decorations
