What You Will Need
- 5 eggs
- 2 and 1/2 cups of canned sweet corn
- 1 3/4 cups of canned creamed corn
- 1 1/3 cups of milk
- 1 1/3 cups of heavy cream
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/3 cup of all purpose flour with a little extra as well
- A glass 12 by 10 inch baking dish
- A large mixing bowl
- Medium mixing bowl
- Whisk
- Mixing spoon
- Baking dish
What to Do
- Preheat the oven to 375 degrees Fahrenheit
- Butter the glass 12 by 10 inch baking dish and set aside, making sure that the inside is coated well to prevent the corn pudding from sticking during the baking process
- Crack the eggs into the large bowl and use the whisk to beat them until they are consistent in color and lighter in color
- Drain the sweet corn to remove as much liquid as possible. You can also use fresh corn cut right off of the cob for this recipe, which gives it a sweeter, fresher flavor. Simply boil or roast the corn on its cobs, allow to cool, and then cut from the cob using a very sharp knife until you have 2 1/2 cups of kernels
- Using the mixing spoon, stir in the sweet corn, making sure to evenly distribute it and mix well
- Add in the creamed corn and stir to combine thoroughly
- Add in the milk and stir to combine
- Add the cream and combine
- Add the flour, baking powder, and salt into the medium bowl and use another whisk or a fork to combine these ingredients and break up any lumps
- Add the dry ingredient mixture into the wet ingredients gradually, mixing thoroughly after each addition to ensure all ingredients combine completely
- Once the mixture is evenly mixed, pour into the buttered baking dish
- Place the pudding in the oven
- Cook the pudding for one hour or until it is puffed on the top and golden brown
- Serve warm
Extra tip: Make your corn pudding stand out by removing the seeds and membrane from a jalapeno, chopping the pepper into small pieces, and adding it in with the rest of the ingredients prior to baking. Removing the seeds and membrane removes the majority of the heat from the pepper so you just get a little bit of kick and the flavor itself. If you do not like spice but want to add a luscious touch, sprinkle a handful of cheddar cheese over the top of the pudding in the last 25 minutes of cooking to create a rich top layer.
